The two main types of foie gras available are duck and goose with goose being the more expensive. Most of the best quality come from France; Rougié brand is available as a product of France or Quebec. They are available whole in vacuum sealed packages or canned in smaller portions. They typically seem to be prepared with cognac, spices or truffles, or a combination.
